For the Vegetables

Method
Preheat your oven to 400°F (200°C).
Season the split chicken breasts generously with kosher salt, pepper, lemon zest, and thyme leaves.
Brown the chicken in a large oven-safe skillet over medium heat with olive oil, about 5 minutes per side.
Add the radishes, carrots, and snap peas to the skillet. Cook for about 4-5 minutes until tender but still crunchy.
Squeeze fresh lemon juice over the chicken and vegetables.
Transfer the skillet to the preheated oven and roast for 12-15 minutes until chicken reaches 165°F (75°C).
