For the Chicken

  • 1.5 pounds Chicken Thighs or breasts
  • 3 tablespoons Olive Oil or avocado oil
  • 3 cloves Garlic minced
  • 1 tablespoon Lemon Zest
  • 3 tablespoons Lemon Juice
  • 1 teaspoon Dried Oregano or fresh in larger amounts
  • 1 teaspoon Dried Thyme or Italian seasoning
  • to taste Salt
  • to taste Pepper

For the Potatoes

  • 1.5 pounds Baby Potatoes or small potatoes

For Garnish

  • to taste Fresh Parsley optional

Method

  • Preheat your oven to 425°F (220°C).
  • In a bowl, mix together olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  • Coat your chicken thighs in the herb mixture and let sit for at least 10 minutes, or refrigerate for up to an hour.
  • Toss halved baby potatoes in a little olive oil, salt, and pepper, ensuring they're nicely coated.
  • Place the marinated chicken skin-side up on a baking sheet and arrange the potatoes around in a single layer.
  • Bake for 35-40 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown.
  • Garnish with freshly chopped parsley and serve hot.
