Ingredients
  

  • 1 box white cake mix
  • 2 packages instant pistachio pudding mix divided
  • 1 cup lemon-lime soda (7UP)
  • ½ cup vegetable oil
  • 3 units eggs
  • ½ cup sweetened shredded coconut
  • ½ cup chopped pecans
  • 1 cup milk
  • 1 container whipped topping (8 oz, softened)

Instructions
 

  • Preheat oven to 350°F (175°C) and grease cake pans.
  • In a large bowl, mix cake mix, 1 package of pistachio pudding, soda, oil, and eggs until smooth.
  • Fold in coconut and chopped pecans gently.
  • Pour batter into pans and bake for 25 to 30 minutes until a toothpick comes out clean.
  • Let the cake cool completely before frosting.
  • In a bowl, mix remaining pudding mix with milk until thick, then fold in whipped topping.
  • Spread frosting over cooled cake. Add coconut or cherries if desired, then chill before serving.

Notes

You can omit coconut and pecans if preferred. Chill the cake before serving for best texture. Yellow cake mix or different clear sodas can be used as substitutes.
