Ingredients
  

  • 2 to 3 cups cherry and/or pear tomatoes sliced in half
  • 1 cup chopped cucumber peeled (and seeded if the seeds are bitter)
  • cup crumbled feta cheese
  • 1 tablespoon mint leaves thinly sliced
  • 1 teaspoon fresh oregano chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons shallots or green onions finely chopped
  • 2 teaspoons extra virgin olive oil
  • coarse salt and freshly ground black pepper to taste

Instructions
 

  • Combine the salad ingredients: Gently toss the tomatoes, cucumber, feta, onions, mint, and oregano together.
  • Dress the salad: Dress with lemon juice, olive oil, salt and pepper to taste.
