Ingredients
  

Sweeteners

  • ¾ cup monk fruit sweetener

Fats

  • 1 cup unsalted butter or vegan butter

Eggs

  • 2 eggs or flax eggs

Flavorings

  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup whole wheat flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ teaspoon cinnamon

  • 1 ¾ cup rolled oats
  • ¾ cup raisins

Preparation

  • In a mixing bowl add the softened butter and sweetener. Using a stand mixer, mix for 3-4 minutes until combined and fluffy. Add the eggs one at a time, mixing well in between. Mix through the vanilla.
  • Sift the flour, baking soda, salt, and cinnamon into the creamed butter. Add the rolled oats and raisins. Stir until well combined.
  • Cover cookie dough with plastic wrap and refrigerate for 30 minutes to chill.
  • Preheat oven to 330 degrees F / 170 C. Line a baking sheet with parchment paper.
  • When the dough has chilled, scoop out a tablespoon-sized amount of dough and roll it into balls.
  • Place on the prepared baking sheet and flatten slightly with your hands, leaving space between each cookie dough ball.
  • Bake for 8-10 minutes until lightly golden. Allow cookies to cool completely on a cooling rack.

Notes

Use room temperature ingredients. Don’t over-mix. Flatten the cookies before baking. Watch the baking time. Adding mix-ins means reducing the amount of raisins. For 100% sugar-free, omit raisins. For vegan, substitute eggs with flax eggs and butter with vegan butter. For monk fruit sweetener substitutions, use less powdered stevia.
