Main Ingredients

  • 1 lb. skinless chicken thighs 500g (4 pieces)
  • 2 cloves garlic minced
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon hot pepper flakes add more for more spicy
  • 1 teaspoon lemon zest around half a lemon
  • 2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon loose dried whole chili chopped or fresh for less heat
  • Coarse sea salt to taste

Instructions
 

Cooking Steps

  • Place all the ingredients into an oven-safe baking tray. Mix well so the chicken is evenly coated with spices, and then cover with some kitchen wrap. Marinate in the fridge for at least 1 hour.
  • Preheat oven to 200°C / 400°F. Bake for 40 minutes or until your chicken reaches an internal temperature of 165°F/74°C.
  • Season to taste with some salt. If you want your chicken spicier, add a light dusting of cayenne pepper.
