Ingredients
  

Potatoes

  • 3 pounds Russet potatoes, peeled and diced into ½ to 1-inch cubes Use a mix of Yukon Gold and Russet for variety.

Liquids

  • 1.5 cups half-and-half or milk, divided 2% or whole milk can be used.
  • 0.5 cup low-sodium chicken broth or water

Flavorings

  • 1 tablespoon minced garlic, divided
  • 0.5 teaspoon salt or as desired
  • 0.5 teaspoon freshly ground black pepper or as desired
  • 1 teaspoon dried thyme or 2 teaspoons fresh
  • 0.5 teaspoon dried rosemary or 1 teaspoon fresh
  • 1 teaspoon fresh parsley, finely minced for garnishing or 0.5 teaspoon dried

Butter

  • 0.5 cup salted butter or unsalted and add additional salt

Creaminess

  • 0.75 cup sour cream

Cooking Instructions

  • Peel and cube the potatoes, place them in a slow cooker, add ½ cup of the half-and-half or milk, broth, 1 teaspoon of the minced garlic, salt, and pepper. Stir to combine and cover the slow cooker. Cook on HIGH for 3 to 4 hours until fork-tender.
  • In the final moments of cooking, brown the butter in a high-sided skillet over medium heat, stirring continuously until it turns brown and smells nutty.
  • Add the thyme, rosemary, and remaining garlic to the browned butter and stir to incorporate.
  • Use a potato masher to mash the cooked potatoes right in the slow cooker.
  • Add half of the browned butter, the remaining 1 cup of milk, and all the sour cream to the potatoes. Mix until smooth and blended.
  • Transfer to a serving bowl or serve from the slow cooker, drizzling with remaining browned butter and sprinkle with parsley before serving.

Notes

Potato choices can vary. I recommend a potato masher for texture. Avoid using electric mixers to prevent gummy potatoes.
