Ingredients
  

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for browning the beef, optional)
  • Fresh parsley for garnish (optional)

Instructions
 

  • In a large skillet, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides.
  • While the beef is browning, chop the carrots, potatoes, and onion. Mince the garlic.
  • In the slow cooker, add the browned beef (or raw beef if skipping the browning), carrots, potatoes, onion, and garlic.
  • Pour in the beef broth, then stir in the tomato paste and Worcestershire sauce.
  • Sprinkle in the dried thyme, rosemary, salt, and pepper. Stir everything to combine well.
  • Set your slow cooker to low for 6-8 hours or high for 3-4 hours. Cover and let it cook until the beef is tender.
  • About 30 minutes before serving, taste and adjust seasoning as needed.
  • Once done, ladle the stew into bowls and garnish with fresh parsley if desired.

Notes

Browning the beef is optional but enhances the flavor of the stew.
