Plantain Tortillas

Equipment

  • Food processor
  • Pot

Ingredients
  

  • 2 medium green plantains Use organic whenever possible
  • 1 teaspoon sea salt

Instructions
 

  • Bring a pot of water to a boil.
  • Wash and cut plantain in a few pieces.
  • Put in boiling water with skin on and boil for 30 min or until you can easily pierce plantain pieces with a fork.
  • Once cooked allow to cool for a few minutes.
  • Peel plantain and either hand mash or place in a food processor until a dough ball forms.
  • Roll dough into equal size balls and place on a plate.
  • Line a tortilla press with plastic wrap and press down the dough ball.
  • Cook each tortilla in a greased cast iron skillet or bake them on a parchment-lined baking sheet.
  • If cooking on a skillet, cook for around 30 seconds on both sides until starting to brown.
  • If cooking in the oven, bake at 435 degrees for 10-20 min, flipping until browned.
  • Place tortillas on a paper towel lined plate to absorb excess moisture while cooling down.
  • Optionally, roll out by hand if you don't have a tortilla press.
