Ingredients
  

Dairy

  • 1 cup milk

Bread

  • 6 slices bread or use 1 ½ c. dried bread crumbs

Meat

  • 2 lb ground beef

Cheese

  • 1 cup grated Parmesan cheese

Seasonings

  • 1 t salt
  • ¼ t seasoned salt
  • ground pepper to taste
  • ¼ c minced flat leaf parsley (or dried parsley)

Eggs

  • 4 eggs beaten

Bacon

  • 8-12 slices bacon center cut preferred

Sauce

  • barbeque sauce use KC Masterpiece Original or homemade

Instructions
 

Preparation

  • Preheat oven to 350.
  • In a large bowl, pour the milk over the bread (or the crumbs) and soak for several minutes.
  • Combine the ground beef with the soaked bread, Parmesan cheese, salt, seasoned salt, black pepper, and parsley.
  • Pour in the eggs.
  • With your hands, mix the ingredients until well combined.
  • Form the mixture into a loaf shape and place it on a broiler pan, lined with foil to catch drippings.
  • Lay bacon slices over the top, tucking them in underneath the loaf.
  • If not using barbeque sauce, combine ketchup, brown sugar, dry mustard, and hot sauce for topping.
  • Pour some sauce over the top of the meatloaf.
  • Bake for 45 minutes, then pour more sauce over the meatloaf.
  • Bake for an additional 15 minutes.
  • Serve with additional sauce on the side.

Notes

You can make your own sauce for topping if preferred. Combine 1 ½ c. ketchup, 6 T. brown sugar, 1 t. dry mustard, and a dash or two of hot sauce.
