Ingredients
  

Cheese and Vegetables

  • 3 ounces Parmesan cheese freshly grated or store-bought
  • 1 pound medium carrots 5 to 6
  • 1 sprig fresh rosemary or ¾ teaspoon dried rosemary

Seasonings and Oil

  • 1 tablespoon olive oil
  • ½ teaspoon dried oregano
  • ¼ teaspoon kosher salt
  • teaspoon freshly ground black pepper
  • Chopped fresh parsley leaves for garnish (optional)

Cooking Instructions

  • Preheat the oven to 425°F and line a baking sheet with parchment paper. Grate the Parmesan cheese and spread it into an even layer on the baking sheet.
  • Peel and trim the carrots. Cut them into equal-sized pieces and place them in a bowl. Add the chopped rosemary.
  • Add olive oil, oregano, salt, and pepper to the carrots. Toss to coat, then arrange the carrots cut-side down in a single layer on the cheese.
  • Roast for 15 to 20 minutes until the cheese is golden and the carrots are tender. Let cool for 2 to 3 minutes and garnish with parsley if desired.

Notes

For a stronger flavor, consider using more rosemary or adding additional herbs to the carrot mixture.
