- 2 cups old fashioned rolled oats not quick oats
- 1.5 cups milk
- 0.5 cups half-and-half
- 2 eggs beaten
- 0.25 cups oil
- 0.75 cups flour
- 2 tablespoons sugar
- 2.5 teaspoons baking powder
- 1 teaspoon salt
- 1 cup apple finely chopped
- 1 pinch cinnamon
Maple butter
- 5 tablespoons butter softened
- 1 tablespoon pure maple syrup
Pancakes
Soak the oatmeal in the milk and half-and-half for at least 10 minutes.
Add the eggs and oil to the oatmeal mixture and stir.
Add flour, sugar, baking powder and salt and stir.
Toss the chopped apple with cinnamon until apple is coated. Add to batter, stirring lightly.
Lightly oil a frying pan and then heat it. Ladle a portion of the batter (about ¼ cup) onto the hot griddle and fry.
Serve with maple butter.
