Ingredients
  

  • 2 Tablespoons unsalted butter
  • 1 cup yellow onion, diced
  • 3 cloves garlic, minced
  • 2 Tablespoons tomato paste
  • 6 cups chicken broth low sodium preferred
  • 8 ounces rotini
  • 1.5 cups heavy cream at room temperature
  • 1 cup Parmesan cheese freshly grated
  • 3 cups rotisserie chicken, shredded
  • 0.75 cup sun dried tomatoes in oil drained and finely chopped
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon red pepper flakes
  • 2 cups baby spinach
  • salt and pepper to taste

Instructions
 

  • Heat 2 Tablespoons of butter in a large pot over medium heat. Add 1 cup onion and sauté until softened, about 4 minutes. Add the minced garlic and cook 1-2 minutes, or until fragrant. Then stir in the 2 Tablespoons tomato paste until combined.
  • Slowly pour in the 6 cups of chicken broth and heat to a low boil over medium to medium-high heat. Add in 8 ounces rotini pasta and cook until the noodles soften, about 9-10 minutes.
  • Once the pasta is cooked, reduce the heat to low and wait 3 minutes before adding 1 ½ cups heavy cream and 1 cup grated parmesan cheese. Stir until combined.
  • Add in 3 cups shredded rotisserie chicken, ¾ cup finely chopped sun-dried tomatoes, 2 teaspoons Italian seasoning, 1 teaspoon garlic powder, and 1 teaspoon crushed red pepper flakes. Season with salt and pepper, to taste.
  • Add in 2 cups fresh baby spinach and heat until the spinach has wilted.
  • Garnish with fresh basil or additional parmesan, if desired.

Notes

Pasta type: Could use similar pasta shapes such as penne. Chicken broth: I used 33% less sodium, but you can use sodium free and adjust to taste by adding salt. Nutrition provided is an estimate. It will vary based on specific ingredients used.
