Ingredients
  

For the Marinade

  • 2 tablespoon Olive Oil Avocado oil can be used as a substitute.
  • 1 medium Shallot Red onion is a suitable substitute.
  • ¼ cup Fresh Lemon Juice Meyer lemon juice can be sweeter.
  • 1 tablespoon Lemon Zest Use zest from either Meyer or regular lemons.
  • 2 tablespoon Fresh Rosemary Fresh thyme can replace it by using one tablespoon fresh to one teaspoon dried.
  • 3 cloves Garlic Garlic powder can be a substitute.
  • 1 tablespoon Dijon Mustard Whole grain mustard can be used for texture.
  • 1 teaspoon Kosher Salt Adjust seasoning as desired.
  • 1 teaspoon Black Pepper Adjust seasoning as desired.

For the Kabobs

  • 1 lb Boneless, Skinless Chicken Thighs Chicken breasts may be used for a lower-fat option.
  • 1 medium Red Onion Bell peppers or zucchini can be added.

Instructions
 

Preparation

  • In a large bowl, whisk together olive oil, diced shallot, fresh lemon juice, lemon zest, chopped rosemary, minced garlic, Dijon mustard, salt, and pepper.
  • Place the chicken thighs into a zip-top bag and pour the marinade over them. Seal the bag and shake gently to coat. Marinate for at least 2 hours.
  • Thread the marinated chicken and red onion pieces onto skewers. Brush with remaining olive oil and lightly season with salt and pepper.
  • Preheat the grill to medium heat, then place kabobs on the grill and cook for about 10 minutes, turning occasionally.
  • Enjoy the kabobs immediately after grilling with fresh veggies or a colorful side salad.
