- 1 jar lemon curd 11 ounces
- 2 boxes mini phyllo shells 30 shells
- 2 teaspoons sugar
- 1 cup berries blueberries and raspberries
- 1 egg white whisked
- Fresh mint to garnish
Preheat your oven to 350°F. Arrange the mini phyllo shells on a baking sheet and gently brush them with whisked egg whites.
Lightly sprinkle with sugar, then bake until golden, about 8 to 10 minutes. Allow them to cool on the baking sheet.
Once the shells have cooled, use a piping bag to neatly fill each one with lemon curd. A spoon can also be used.
Adorn your tartlets with a sprig of fresh mint and a mix of blueberries and raspberries.
These can be served immediately or refrigerated until ready to serve.
