Ingredients
  

  • 2 cans lemon pie filling 21 oz each
  • 1 whole lemon juiced
  • 6 tablespoon butter melted
  • 1 cup milk
  • 1.5 cup sugar divided
  • 0.5 teaspoon salt
  • 2 teaspoon baking powder
  • 2 cups flour
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract
  • 2 tablespoon cornstarch
  • 2 cups boiling water
  • Tiny mint sprigs for garnish on the ice cream

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine lemon pie filling and lemon juice.
  • In another bowl, mix melted butter, milk, 1 cup of sugar, salt, baking powder, flour, vanilla extract, and almond extract.
  • Spread the pie filling in a baking dish.
  • Pour the batter over the pie filling, but do not mix.
  • In a separate pot, combine cornstarch and 0.5 cup sugar with boiling water, stirring until thickened.
  • Pour the hot mixture over the batter.
  • Bake in the preheated oven for 60 minutes.
  • Serve warm with ice cream and garnish with mint sprigs.

Notes

Best served warm, with a scoop of vanilla ice cream for added richness.
