Ingredients
  

Green Beans

  • 1.5 pounds green beans trimmed
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon extra-virgin olive oil
  • 0.5 teaspoon kosher salt plus more if needed
  • freshly ground black pepper to taste

Cooking Instructions

  • Bring a large pot of salted water to a boil. Add the green beans and cook until just barely tender, about 5 minutes. Drain well.
  • While the beans are cooking, in a large serving bowl, whisk together the honey, Dijon mustard, vinegar, olive oil, ½ teaspoon salt, and pepper.
  • Toss the green beans in dressing, taste and adjust seasonings as needed, and serve warm or at room temperature.

Notes

I used skinny haricots verts in this dish, but you can use regular green beans.
