Instructions

Preparation

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  • In a large bowl, combine ground meat, breadcrumbs, egg, onion, minced garlic, soy sauce, sesame oil, black pepper, and salt. Mix gently and form small meatballs.
  • Heat oil in a skillet over medium heat. Sear meatballs for 2-3 minutes per side until browned. Remove and set aside.

  • Spread uncooked rice in the baking dish. Top with bell peppers and peas. Drizzle with olive oil or butter.
  • Pour chicken broth over the rice and vegetables. Nestle the seared meatballs into the mixture.
  • Pour honey garlic sauce over the meatballs and rice. Cover tightly with aluminum foil.
  • Bake covered for 40 minutes. Remove the foil and bake for another 10-15 minutes.
  • Let the bake rest for 5-10 minutes. Garnish with green onions before serving.

Notes

The internal temperature of the meatballs should reach 165°F (74°C) to ensure they are safely cooked. This dish stores well for meal prep and leftovers.
