Ingredients
  

Puff Pastry

  • 1 sheet all-butter puff pastry thawed and kept cold
  • ½ pound thinly sliced ham Black Forest, French style, prosciutto, or your favorite kind
  • 1 tablespoon Dijon mustard slightly generous
  • 1 ¼ cups grated cheese baby Swiss or Gruyere
  • 1 teaspoon herbes de Provence
  • 1 egg whisked egg for egg wash
  • Fresh thyme leaves for garnish

Preparation Steps

  • Gather and prep all ingredients except the puff pastry; keep that cold.
  • Preheat your oven to 400° and line a baking sheet with parchment paper.
  • Lightly flour a work surface and roll out the puff pastry to roughly 13 ½ by 11 ½ inches. Cut into 4 squares.
  • Position each square in a diamond shape. Add ham, Dijon mustard, cheese, and herbes de Provence to the center.
  • Bring the corners together to seal, using a bit of water. Repeat for all croissants.
  • Chill the croissants in the fridge for 20 minutes, covered with plastic wrap.
  • Brush with egg wash and sprinkle remaining cheese on top before baking.
  • Bake for 26 to 27 minutes until golden brown and ham is crispy.
  • Cool to warm or room temperature, garnish with thyme leaves, and serve.

Notes

Serve with a crisp green salad for a complete meal.
