Ingredients
  

  • 1 package spaghetti or other pasta
  • 2 tablespoons olive oil (30ml)
  • 8 ounces spicy pork sausage sliced (or hot dogs)
  • ½ medium white onion diced
  • 1 teaspoon minced garlic (5g)
  • 1 teaspoon minced thyme (1g)
  • ½ cup green bell pepper diced (120g)
  • ½ cup red bell pepper diced (120g)
  • 2 tablespoons tomato paste (30g)
  • 2 medium tomatoes chopped
  • 1 medium habanero or scotch bonnet pepper
  • 1 teaspoon bouillon powder (3g)
  • 1 cup reserved pasta water (236ml)
  • 2 green onions sliced
  • salt to taste
  • pepper to taste

Instructions
 

  • Bring a large pot of salted water to boil over medium heat. Add pasta and cook to al dente following the package directions. When the pasta is cooked, drain it in a colander and reserve about 1 cup of the pasta water.
  • Meanwhile, heat a large skillet over medium-high heat and add olive oil. Sauté the sliced pork sausage until browned, about 2 minutes on each side. Transfer the sausage to a plate and set aside.
  • To the same skillet, add white onions, garlic, thyme, and bell peppers and sauté for 2-3 minutes or until the vegetables are softened.
  • Add the tomatoes and tomato paste, stir well, and cook for 2 more minutes.
  • Next, add the scotch bonnet pepper, bouillon powder, salt, and pepper to taste. Add ½ cup of reserved pasta water to loosen the sauce. Let the mixture simmer for 8-10 minutes.
  • Add the cooked pasta to the sauce and stir well until the pasta is coated with the sauce. Finally, add the pork sausage to the pasta and stir to combine.
  • Garnish with sliced green onions, serve, and enjoy!

Notes

If the sauce is too thick, add a few tablespoons of water left over from boiling the spaghetti. Please don't overcook the pasta. Drain it as soon as it is al dente since you'll be heating it back up in the sauce later. Feel free to use hot dogs or different types of meats. This recipe is great with beef kielbasa or simple smoked sausage. Add some extra garnishes if you please. Sliced avocado or boiled egg are typical garnishes that look pretty and add a lot of flavor to the dish. Fresh chopped parsley also looks and tastes great.
