Ingredients
  

Fresh Green Beans

  • 750 g green beans trimmed and halved

Crispy Fried Onions

  • 2 large yellow onions peeled, halved and thinly sliced
  • 35 g flour (plain/all purpose)
  • 2 tablespoon panko breadcrumbs
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 cups vegetable oil for deep-frying

Creamy Mushroom Sauce

  • 50 g butter unsalted
  • 360 g mushrooms chopped
  • 0.75 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cloves garlic minced
  • 35 g flour (plain/all purpose)
  • 375 ml vegetable or chicken broth low sodium
  • 125 ml cream heavy/thickened
  • 1 pinch nutmeg or sprinkle of freshly grated

Instructions
 

Prepare Beans

  • Boil green beans for 3 minutes until just tender, then drain and run under cold water.

Crispy Onions

  • Toss onions with flour, panko, salt and pepper. Heat oil and fry onions until golden.
  • Transfer to a tray lined with paper towels to drain excess oil and cool.

Creamy Mushroom Sauce

  • Melt butter, add mushrooms, cook until softened, then add garlic.
  • Stir in flour, gradually add broth and cream, and cook until sauce thickens.

Assemble & Bake

  • Preheat oven to 350°F. Combine beans with sauce and transfer to a casserole dish.
  • Top with fried onions and bake for 15 minutes until bubbling and onions are deep golden.

Notes

For best results, fry onions until light golden. They will crisp further when cooled and baked. Make ahead by preparing sauce and beans and storing them in the fridge. Fry onions a day before.
