Ingredients
  

Tzatziki Sauce

  • ½ cup light sour cream
  • ½ cup non fat greek yogurt
  • ½ cup shredded english cucumber (about ½ cup total after water is pressed out)
  • 1-2 teaspoon dried dill
  • ½ teaspoon garlic powder
  • 1 teaspoon olive oil
  • 1 tablespoon lemon juice
  • ¼ teaspoon kosher salt

Greek Roasted Vegetables

  • 2 lbs fresh vegetables a mix of yellow squash, zucchini, bell peppers, red onions, asparagus
  • 2 tablespoon olive oil
  • 1.5 tablespoon Greek Seasoning I use Cavender's
  • 2 teaspoon dried oregano
  • ½ teaspoon smoked paprika

Greek Meatballs

  • 1 lb uncooked extra lean ground beef
  • 1 lb lean ground turkey
  • 2 teaspoon kosher salt
  • 2 tablespoon oregano
  • 1.5 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ cup panko breadcrumbs
  • cooking spray

Couscous

  • 2 cups uncooked Pearl Couscous
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 2 tablespoon fresh lemon juice (optional)

Optional additions

  • Feta
  • Chopped lettuce/cucumber/tomato

Instructions
 

Tzatziki Sauce

  • Shred the cucumber and press it to remove water. Mix yogurt, sour cream, dill, garlic powder, lemon juice, olive oil, and salt. Refrigerate for at least 1 hour before serving.

Greek Roasted Vegetables

  • Preheat oven to 425°F. Prepare sheet pan, mix vegetables with oil and seasoning. Roast for 20-25 minutes, stirring halfway.

Greek Meatballs

  • Preheat oven to 425°F. Mix beef, turkey, breadcrumbs, spices and form into meatballs. Bake for 10-12 minutes until brown.

Couscous

  • Boil water with garlic and oil. Add couscous and cook for 8-10 minutes. Season to taste and add lemon juice if desired.
  • Assemble bowls: ½ cup couscous, 1 cup roasted vegetables, 3-4 meatballs, drizzle Tzatziki sauce.

Notes

Suggested serving size: 4 Greek meatballs, 1 cup roasted vegetables, 2 tablespoons Tzatziki sauce, ½ cup couscous.
