Vegetables

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 cups sliced carrots
  • 1 medium red bell pepper, chopped
  • 1 medium yellow bell pepper, chopped

Seasoning

  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ¼ cup fresh parsley, chopped for garnish

Cooking Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and chop the vegetables into bite-sized pieces.
  • In a large mixing bowl, combine all vegetables with olive oil, minced garlic, salt, pepper, oregano, and thyme. Toss well to coat.
  • Spread the mixture evenly on a baking sheet in a single layer.
  • Roast in the preheated oven for 25-30 minutes, stirring halfway through until tender and caramelized.
  • Remove from the oven and garnish with fresh parsley before serving.

Notes

For best results, ensure the vegetables are spread in a single layer on the baking sheet for even roasting.
