Ingredients
  

  • 1.5 lb boneless skinless chicken breasts
  • 1.5 lb baby Yukon gold potatoes left whole
  • 3 tablespoon butter melted
  • 0.5 cup chicken broth
  • 0.5 cup light cream or half-and-half
  • 0.5 cup freshly grated Parmesan cheese
  • 4 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper
  • 2 tablespoon chopped fresh parsley for garnish
  • 0.5 lb fresh green beans steamed or sautéed for serving

Instructions
 

  • Add the whole baby Yukons to the bottom of your crockpot.
  • Season chicken breasts with salt, pepper, paprika, and Italian seasoning, then place them directly on top of the potatoes.
  • In a small bowl, whisk together melted butter, minced garlic, chicken broth, cream, and Parmesan until smooth and creamy.
  • Pour the sauce evenly over the chicken and potatoes.
  • Cover and cook on Low for 4–5 hours, or until the chicken is tender and the potatoes are fork-soft.
  • Gently stir to coat everything in the sauce, sprinkle with parsley, and serve with steamed green beans for a complete meal.

Notes

This is a perfect dish for weeknight dinners and can be paired with various side vegetables.
