Ingredients
  

Beef and Toppings

  • 1 pound lean ground beef
  • 1 ounce taco seasoning mix
  • 1 medium red onion finely chopped, divided
  • 2 cups mild chunky salsa
  • 1 15-ounce can black beans drained and rinsed
  • 4 cups sturdy tortilla chips (about 3 ½ ounces)
  • 4 ounces pre-shredded Mexican 3-cheese blend (about 1 cup)
  • ½ cup shredded iceberg lettuce
  • ½ cup chopped tomatoes
  • cup sour cream

Cooking Steps

  • Preheat oven to broil with a rack about 8 inches from the heat source.
  • Heat a large ovenproof skillet over medium-high heat. Add the beef, taco seasoning, and about 1 cup of the onion. Cook, stirring often, until the beef is browned and the onion is translucent, 6 to 7 minutes. Do not drain.
  • Add the salsa and beans and reduce the heat to medium. Simmer, stirring often, until the sauce thickens and the flavors meld, about 3 minutes.
  • Fold in the tortilla chips until just combined. Top with the cheese and transfer to the preheated oven. Broil until the cheese is melted, 2 to 3 minutes. Remove from the oven and top with the lettuce, tomatoes, sour cream, and remaining ¼ cup diced onion.
