How to Make Spiced Red Lentil Coconut Soup

  • Heat a tablespoon of oil in a large pot over medium heat. Cook onions and garlic until fragrant and translucent, about 3–4 minutes, stirring occasionally.
  • Add turmeric, cumin, chili flakes, and grated ginger to the pot. Stir constantly for about 1 minute until the spices bloom and release their warm, earthy aroma.
  • Pour in rinsed red lentils and vegetable broth. Bring to a gentle boil, then skim any foam and stir to combine all the ingredients into a golden-orange mixture.
  • Reduce heat to low, cover the pot, and let the soup simmer for 20–25 minutes until the lentils are tender and starting to break down into a creamy texture.
  • Uncover, pour in creamy coconut milk, and stir gently. Cook over low heat for 5 minutes until the soup thickens and you see lovely cream-colored swirls.
  • Taste the soup, then add salt and pepper as needed. Ladle into bowls and garnish with fresh cilantro and a lime wedge for a bright, zesty finish.
