Ingredients
  

  • 2 eggs eggs
  • 0.5 cup honey
  • 2 carrots, shredded
  • 1 cup oats
  • 0.5 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 0.25 cup butter, room temperature
  • 1 teaspoon vanilla

Instructions
 

  • Preheat your oven to 180C/350F.
  • Put all ingredients, except the shredded carrot into a bowl and blend with an immersion blender. If you don’t have an immersion blender, place the ingredients into a blender and blend until smooth.
  • Stir in the shredded carrot.
  • Line a small baking pan with parchment paper. Spread the mixture in the pan and bake at 180C/350F for 20-30 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool off and slice and enjoy!

Notes

This carrot cake is super tasty on its own, but for a frosting, mix cream cheese, honey, and vanilla and spread over the cake once it’s cooled off.
