Ingredients
  

Dressing

  • 1 cup Whole Grain Dijon Mustard Can substitute with yellow mustard
  • 3 tablespoon Green Onions Chives or shallots as alternatives
  • 1 cup Extra Virgin Olive Oil Can substitute with avocado oil
  • 3 tablespoon Honey Agave syrup works as a vegan alternative
  • ¼ cup White Balsamic Vinegar Apple cider vinegar can be used instead

Salad

  • 1 pound Boneless, Skinless Chicken Thighs Chicken breasts can be used but may be drier
  • 2 tablespoon Canola Oil Olive oil can be used instead
  • 4 slices Bacon Can replace with turkey bacon or omit
  • 6 cups Romaine Lettuce Mixed greens or spinach work as substitutes
  • 1 cup Strawberries Other berries like blueberries or raspberries can be used
  • 1 medium Avocado Cubed mango can be used as a tropical twist
  • 1 cup Corn Kernels Canned or roasted corn works well, or thawed frozen corn

Instructions
 

Preparation

  • Whisk together the dressing ingredients in a medium bowl.
  • Marinate the chicken in ⅔ of the dressing for 2-6 hours.
  • Preheat the grill and brush marinated chicken thighs with canola oil.
  • Grill chicken for about 10 minutes until internal temperature reaches 165°F.
  • Cook bacon in a cast iron skillet until crispy, then drain on paper towel.
  • Assemble the salad in a large bowl with lettuce, chicken, bacon, strawberries, avocado, and corn.
  • Drizzle with reserved dressing and toss gently before serving.
