Ingredients
  

Vegetables

  • 2 units cucumber sliced
  • ¼ cup rice wine vinegar
  • ¼ cup water
  • 2 tablespoons dill chopped
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons basil chopped
  • 1 unit green onion sliced
  • 1 clove garlic pressed/minced
  • 1 tablespoon sugar
  • 2 teaspoons light sesame oil
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • crushed red pepper flakes

Instructions
 

  • In a large bowl, add all ingredients and mix well to combine.
  • Cover bowl, and allow cucumber salad to refrigerate for at least an hour before serving.
  • Garnish with extra green onion and dill if desired.

This salad pairs well with grilled entrees and creamy pasta or rice side dishes.
