Ingredients
  

  • 2-3 pieces skinless boneless raw chicken breasts thawed
  • 2 cups fresh green beans chopped in thirds
  • 2 cups red potatoes quartered or baby red potatoes
  • ¼ cup lemon juice
  • 3 tablespoons olive oil
  • 1 teaspoon Italian Seasoning
  • 2 teaspoons minced garlic
  • ½ teaspoon onion powder
  • 1 teaspoon table salt
  • ¼ teaspoon black pepper

Instructions
 

  • Start by spraying the inside of the slow cooker with cooking spray.
  • Place the chicken breasts in the center of the slow cooker. Add the fresh green beans to one side of the chicken, and red potatoes to the other side.
  • In a small bowl, mix together lemon juice, olive oil, Italian Seasoning, minced garlic, onion powder, salt, and pepper.
  • Pour the lemon mixture over the chicken, green beans, and potatoes.
  • Cover the slow cooker and cook on high for 4 hours.

Notes

I either use quartered red potatoes or love to use baby red potatoes. Use thawed chicken breasts; adjust cook time to 6-8 hours if using frozen chicken breasts.
