Ingredients
  

Zucchini Wafers

  • 2 medium zucchini sliced thinly
  • 1 cup Parmesan cheese freshly grated
  • 1 teaspoon salt for draining

Lemon Cream Dip

  • 1 cup sour cream or Greek yogurt
  • 1 medium lemon juice and zest
  • 1 teaspoon black pepper to taste

Instructions
 

Preparing the Zucchini

  • Slice zucchini finely using a mandoline to about 1/16-inch thick.
  • Sprinkle salt on the slices and let them drain for 30 minutes.
  • Pat the slices dry with paper towels to remove excess moisture.
  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Arrange zucchini slices on the baking sheet, making sure not to crowd them.
  • Sprinkle grated Parmesan evenly over the slices.
  • Bake for about 15 minutes or until edges are golden and crispy.

Making the Lemon Cream Dip

  • In a bowl, mix sour cream and lemon juice until smooth.
  • Add lemon zest and black pepper; adjust seasoning to taste.

Serving

  • Serve the crispy zucchini wafers hot with the lemon cream dip on the side.

Notes

Make sure to let the wafers cool completely before storing to maintain crispiness.
