  • 1 15-oz can whole kernel corn drained
  • 1 15-oz can creamed corn NOT drained
  • 1 cup sour cream full-fat recommended
  • 0.5 cup melted butter (1 stick)
  • 1 8.5-oz box corn muffin mix any brand works
  • 1 tablespoon sugar
  • 0.5 teaspoon salt balances sweetness
  • 0.5 to 1 cup shredded cheddar cheese optional but delicious

Casserole Instructions

  • Preheat oven to 350°F. Grease a 9x9-inch baking dish.
  • In a large bowl, stir together all ingredients. If using cheese, fold in ½ to 1 cup shredded cheddar.
  • Pour into the prepared dish and smooth the top.
  • Bake for 40–45 minutes, or until golden brown at the edges and the center is set.
  • Cool for 5–10 minutes before serving. Optional: Sprinkle with chopped chives or parsley.

Notes

Use full-fat sour cream for the best texture. Cheese is optional, but highly recommended for extra flavor.
