- 2 jalapeno peppers, seeded and chopped
- ¼ cup salted butter
- 8 ounces cream cheese, cubed
- 2 cups shredded Cheddar cheese, divided
- ½ cup heavy cream
- salt and freshly ground black pepper to taste
Preheat the oven to 400 degrees F (200 degrees C).
Melt butter in a saucepan over medium heat. Add cream cheese, 1 cup cheddar cheese, and heavy cream; cook and stir until melted and smooth. Stir in corn and jalapenos. Season with salt and pepper.
Remove from heat and pour into a 9x13-inch baking dish. Sprinkle evenly with remaining cheese; cover with foil.
Bake in the preheated oven for 20 minutes. Remove foil and bake until cheese is bubbly, about 5 minutes. Serve immediately.
