  • 2 cups Mixed Vegetables like spinach, bell peppers, zucchini, carrots
  • 1 cup Shredded Mozzarella Cheese consider dairy-free cheese for vegan
  • ½ cup Cream Cheese cashew cream works for vegan
  • 2 large Eggs use flaxseed meal for a vegan substitute

For the Wrapper

  • 8 large Tortillas or Spring Roll Wrappers whole wheat or gluten-free options if desired

For Seasoning

  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 teaspoon Onion Powder or fresh chopped onions
  • Salt and Pepper to taste

For Baking

  • Olive Oil for brushing

Preparation

  • Preheat Oven: Start by setting your oven to 375°F (190°C).
  • Sauté Vegetables: Heat a splash of olive oil in a skillet over medium heat. Toss in your mixed vegetables and sauté for about 5-7 minutes. Season with garlic powder, onion powder, salt, and pepper.
  • Mix Filling: In a large bowl, combine the sautéed vegetables, shredded mozzarella, and cream cheese. Mix thoroughly until the filling is creamy and well-blended.
  • Assemble Rolls: Lay one tortilla flat. Spoon approximately ¼ cup of the filling into the center, fold the sides in, and roll it tightly. Repeat with remaining tortillas.
  • Bake: Arrange the rolls seam-side down on a greased baking sheet. Lightly brush the tops with olive oil. Bake for 20-25 minutes, or until golden brown.
  • Serve: Allow the rolls to cool slightly before serving. Pair them with marinara sauce or a yogurt dip.
