Ingredients
  

Cauliflower and Seasoning

  • 2 bags cauliflower florets or 1 large head of cauliflower
  • 2 tablespoons olive oil
  • 1-2 teaspoons seasoning salt or as desired

Sauce Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups whole milk 2% or half-and-half may be substituted
  • 0.5 teaspoon salt or to taste
  • 0.5 teaspoon fresh thyme
  • 0.25 teaspoon ground nutmeg optional
  • 1 cup Gruyere cheese grated
  • 0.5 cup panko bread crumbs do not use regular bread crumbs
  • 0.5 cup shredded parmesan cheese divided

Garnish

  • Fresh parsley optional for garnishing
  • Fresh thyme optional for garnishing

Instructions
 

Preparation

  • Preheat oven to 425F.
  • Line a baking sheet with foil if desired. Spray with cooking spray and evenly scatter the cauliflower florets.
  • Drizzle with olive oil, sprinkle with seasoning salt, and toss to combine.
  • Roast for about 20 minutes, or until golden browned and tender.

Cheese Sauce

  • In a medium saucepan, melt the butter over medium heat.
  • Sprinkle the flour over the butter and cook for 1 minute, whisking constantly.
  • Slowly add the milk, salt, thyme, nutmeg, and cook until thickened.
  • Add Gruyere cheese and half of the Parmesan cheese, stirring until melted.

Assembly and Baking

  • In a greased baking dish, add the roasted cauliflower and smooth evenly.
  • Pour the cheese sauce over the cauliflower.
  • Combine panko bread crumbs and remaining Parmesan, sprinkle over the cheese sauce.
  • Reduce oven heat to 375F and bake for about 20 minutes.

Serving

  • Optionally garnish with fresh herbs and serve.

Storage

  • Store airtight in the fridge for up to 5 days; reheat gently.

Notes

Nutmeg is optional based on personal preference; omit if undesired.
