Ingredients
  

  • 1 ½ cups warm milk or water 110 to 115°F
  • 1 tablespoon brown sugar
  • 1 package active dry yeast (0.25-ounce)
  • 4 ½ cups all-purpose flour plus more if needed
  • 2 tablespoons melted butter plus extra for brushing
  • 1 teaspoon fine sea salt
  • 9 cups water
  • cup baking soda
  • 1 large egg whisked with 1 tablespoon water
  • pretzel salt or coarse sea salt for sprinkling

Instructions
 

Prep and Make Dough

  • Whisk together the warm milk and sugar in a large mixing bowl. Sprinkle the yeast on top and wait 5 minutes for the yeast to foam up and activate.
  • Add the flour, melted butter and salt. Mix everything in until combined, then knead the dough for about 4 minutes until smooth.
  • Transfer the dough to a lightly-oiled bowl, cover with a damp towel, and let it rest for 20 to 30 minutes until it has doubled in size.

Boil and Bake

  • Preheat the oven to 450°F. Line two baking sheets with parchment paper and bring the water and baking soda to a boil.
  • Turn the dough out, divide into 12 pieces and roll into ¾-inch wide ropes. Cut into 1-inch pretzel bites.
  • Transfer the bites into boiling water for about 30 seconds, then place on the baking sheets.
  • Brush each bite with egg wash and sprinkle with coarse sea salt.
  • Bake until golden brown, about 12 to 14 minutes, then transfer to a wire cooling rack.
  • Optional: Brush with extra melted butter for additional flavor.
  • Serve warm and enjoy!

Notes

These pretzel bites taste best the day they have been baked, especially hot out of the oven.
