- 1 medium head cauliflower cut into bite-sized florets
- ¾ cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- ¾ cup water or unsweetened non-dairy milk
- 1 cup buffalo sauce
- 1 tablespoon olive oil
- Ranch or blue cheese dressing for serving (optional)
Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, garlic powder, smoked paprika, salt, pepper, and water (or non-dairy milk) to form a smooth batter.
Add the cauliflower florets to the batter and toss until well coated. Arrange the coated florets in a single layer on the prepared baking sheet.
Bake for 20 minutes, flipping halfway through, until the cauliflower is lightly crisp.
In a small bowl, mix the buffalo sauce with olive oil. Remove the cauliflower from the oven and brush or toss with the buffalo sauce until evenly coated.
Return the cauliflower to the oven and bake for an additional 10 minutes until the wings are crisp and sticky. Serve hot with ranch or blue cheese dressing if desired.
