Ingredients
  

Fruits and Vegetables

  • 1 pint fresh blueberries
  • 2 peaches, finely diced
  • 2 Persian cucumbers, thinly sliced

Dressing

  • 3 tablespoons freshly squeezed lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped basil
  • Kosher salt to taste
  • freshly ground black pepper to taste

Cheese

  • ½ cup crumbled feta cheese

Instructions
 

Preparation

  • In a large serving bowl, mix together the blueberries, diced peaches, sliced cucumbers, and crumbled feta.
  • In a jar with a lid or a measuring cup, combine the lemon juice, Dijon mustard, maple syrup, olive oil, chopped basil, salt, and pepper. Shake vigorously or whisk until the vinaigrette is well blended.
  • Pour the vinaigrette over the salad ingredients and gently toss everything together. Adjust seasoning to taste and garnish with additional basil if desired.
  • Serve immediately or cover and refrigerate the salad until ready to serve.
