Wet Ingredients

  • 3 large ripe bananas, mashed Use very ripe bananas for best flavor
  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • ¼ cup milk

Dry Ingredients

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup flour (for streusel) Chill streusel for better texture

Baking Instructions

  • Preheat oven to 350°F and line a muffin tin.
  • Mix mashed bananas, eggs, melted butter, milk, and sugars until smooth.
  • In another bowl, whisk flour, baking powder, baking soda, cinnamon, and salt.
  • Combine wet and dry ingredients gently.
  • Fill muffin cups and top with streusel mixture.
  • Bake for 18 to 22 minutes until golden.
  • Cool slightly before serving.
