Ingredients
  

Apples

  • 1.5 cups peeled & chopped apples about 2 medium apples
  • cup packed brown sugar
  • 1.5 teaspoons ground cinnamon

Batter

  • 1.75 cups all-purpose flour spooned & leveled
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter softened to room temperature
  • ¾ cup granulated sugar
  • 2 large eggs at room temperature
  • cup unsweetened applesauce at room temperature
  • 1 teaspoon pure vanilla extract
  • 0.5 cup whole milk at room temperature

Instructions
 

Preparation

  • Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Spray a 9×5-inch loaf pan with nonstick spray.
  • Stir the apples, brown sugar, and cinnamon together. Set aside.
  • Whisk the flour, cinnamon, nutmeg, baking powder, baking soda, and salt together in a large bowl. Set aside.
  • Beat the butter and granulated sugar together on high speed until smooth and creamy, about 3 minutes. Add the eggs and beat until combined. Mix in the applesauce and vanilla extract.
  • Pour the dry ingredients into the wet ingredients, mixing on low speed while slowly adding the milk, just until combined.
  • Pour ½ of the batter into the prepared loaf pan. Spoon the apples and leftover juices on top, then pour the remaining batter over it.
  • Bake for 60-75 minutes, loosely covering with aluminum foil at the 30-minute mark. Check for doneness with a toothpick.
  • Allow to cool completely in the pan on a wire rack before slicing.

Notes

Freezing Instructions: Freeze baked & cooled loaf for up to 3 months. Thaw overnight in the refrigerator. For muffins, use a similar recipe available on the site.
