Ingredients
  

Fruits

  • 2 cups finely diced apple

Dry Ingredients

  • 2 cups flour (spelt, white, or oat)
  • 2 teaspoon baking powder
  • ¾ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¾ cup sugar

Wet Ingredients

  • 1 cup milk of choice
  • 3 ½ tablespoon oil or applesauce
  • 2 teaspoon pure vanilla extract

Baking Instructions

  • Preheat oven to 350 F. Stir dry ingredients very well. Add remaining ingredients to form a batter, smooth into a greased 9x5 pan, and bake for 50 minutes or until a toothpick inserted into the center comes out mostly clean.
  • Let cool. Cover with a cloth overnight and serve the next day for better flavor and texture. Leftovers can be sliced and frozen.
  • If desired, frost with your favorite icing or a simple glaze.
